Flooded Fox Den Distillery

“Flooded Fox Den Distillery is a family owned and operated start-up, craft distillery located in the Portland, Oregon area. Flooded Fox Den was founded in 2013 with a firm belief that spirits should be produced with the highest quality ingredients and skill to achieve the finest tasting spirits.  We strive to adhere to classic flavor profiles and implementations of our spirits. Our products are produced using a small, single batch process that allows the flavor and quality of each bottle to be precisely controlled.  Each batch uses only the finest, natural ingredients.  We refuse to use artificial flavors, colorings, fillers or artificial sweeteners in our products.” We recently received all three of this new distilleries products: Covered Peak Vodka, Dancing Dog Gin, and Land Legs Rum.

Covered Peak Vodka

“Covered Peak Vodka is a grain based vodka that is distilled six times then charcoal filtered.  The charcoal filtering rounds off the edges leaving a clean and smooth premium vodka. Covered Peak Vodka is smooth enough to drink on its own or mixed in your favorite drink.”

Dancing Dog Gin

“Dancing Dog Gin is a bold, full flavored Gin with a layered flavor profile.  Dancing Dog Gin starts with wood and spice notes,  transitions to lavender and chamomile notes then finishes with citrus. The layer structure makes Dancing Dog Gin perfect for serving on the rocks or in a very dry Martini. Dancing Dog Gin is hand-crafted in small batches using nine all natural botanicals like Juniper, Orris root, Angelica Root and more.  We do not use bulk extracts or artificial flavors of any kind.” This gin was also a gold medal winner in the 2015 San Francisco world spirit competition.

Land Legs Rum

“Land Legs Rum is our newest addition to Flooded Fox Den’s line up. We distill Land Legs Rum in small batches using only American cane products. The result is a smooth, classic rum that is perfect for mixing in your favorite drinks.  Land Legs Rum has the traditional rum sweetness with just enough heat to know your drinking adult drinks.”

Choya Umeshu Liqueur

“Umeshu is a traditional Japanese liqueur made from ume fruit. A perfect balance between ume extract and alcohol is achieved by aging the whole fruit, with the stone still inside. The delicious tang of Umeshu comes from citric acid in the fruit, and the refreshing flavour stimulates the appetite. Umeshu also contains malic and succinic acids. Refresh yourself by enjoying a glass of Umeshu when feeling tired. The addition of alcohol to the fruit during production means that the ume flavour can be extracted not only from the flesh and skin but also from the stone. It is this process which gives CHOYA Umeshu its unique fruity bouquet, with notes of almond and marzipan.” We now carry the liqueur in the Classic version, Shiso, and Honey flavors. Facts about the Ume fruit (found in the bottom of the Choya liqueur):

 The fruit contains polyphenol. The amount of polyphenol increases as it matures.
 Ume plums have a very short growing season, ripening in late spring and lasting through the beginning of summer.
 The color of Ume plums depends on the time of harvest. When harvested young the plums are light green in color. As the plums ripen, their skin will turn to shades of yellow and red. Ume plums are small, about 1.5-2 inches in diameter. Their taste is extremely acidic and therefore they are rarely eaten raw. When consumed raw they are known to cause stomach aches. In Asian culture Ume plums are known for their sour and bitter aroma and are utilized similarly to the way lemons are used in western culture.
 Ume plums contain very few vitamins and minerals. However, because of its acidic nature Asian medicine alleges that it helps with relieving hangovers and stomach issues such as diarrhea and morning sickness. – See more facts about the Ume fruit at: www.specialtyproduce.com

Tea Spirit No. 2: Single Estate Ceylon Sweet Tea Liqueur

Townshend’s Tea Company has been importing high quality teas since 2003. No. 2 Sweet Tea is the first of its kind- A distilled spirit crafted in-house, leaf to bottle, from our Single Estate Ceylonblack tea and cane sugar.

Tea Spirit No. 5: Lapsang Souchong Smoke Tea Liqueur

A campfire in a bottle, No. 5 Smoke Tea gets its full flavor from pine-smoked Lapsang Souchong black tea. Vanilla bean, South African rooibos and pacific northwest honey are added to the distillate to complete this smooth tea spirit.

Tea Spirit No. 16: Cassia Orange Ginger Spice Tea Liqueur

Townshend’s No. 16 Spice Tea is a blend of Yunnan black tea, ginger root, cassia, cinnamon, orange peel , allspice and cane sugar. The result is a subtly sweet, uniquely spiced tea spirit, delicious on its own or in any cocktail for added complexity.

New Spirits!

Blood Oath Kentucky Straight Bourbon

“Blood Oath Bourbon Pact No. 1 is Rempe’s latest creation, and according to Rempe, “is an exquisite union of three well-bred bourbons with various age statements (6 to 12 years) and mash bills. The first, a spicy bourbon with a mash bill favoring rye, barrel aged for a subtle woodiness. The second is a smooth, wheated bourbon and the third is a full-bodied, more experienced, oaky bourbon with a rye-based mash. Each of these complement the other and none overpower the palate, creating an amazing bourbon.”

This harmonious blend lends the bourbon notes of cream soda, breakfast tea, vanilla and green apples on the nose. The palate is filled with flavors of cocoa, honey, orange creamsicle and mint, and leads to a long, dry finish complete with notes of spicy rye and funnel cake.” For more information and a full history check out: Caskers.com

Hillrock Solera-Aged Bourbon

“Hillrock Solera Aged Bourbon marries Hillrock Estate Bourbon with a mature seed bourbon that was carefully sourced by Pickerell. After cascading through the solera, Hillrock Solera Aged Bourbon is finished in 20 year old Oloroso Sherry casks. The finishing process balances the spicy rye flavors of the bourbon and adds further complexity, with layers of fig, roasted walnuts and candied fruit. The current age of Hillrock Solera Aged Bourbon is over six years and the rye content is approximately 37%.

Hillrock Bourbon was named one of the Top 50 Spirits of 2013 by Wine Enthusiast (it was ranked the #2 bourbon), which gave it a score of 96 points. It also earned the SIlver Medal at the San Francisco World Spirits Competition in 2013.

Sweet nose with caramel and vanilla, slightly floral and fruity. Sweet yet slightly spicy from the rye, it has notes of brown sugar, maple syrup, rock candy and toffee. Spicy notes include clove and cinnamon. Well-balanced with roasted corn, toast and raisin. Sherry finishing adds flavors of walnut, fig and candied fruit. Ypioca Cachaca Crystal

“Ypioca is known as the largest producer of Cachaca in Brazil and makes several types, notably; Rum Toucano – aged for two years in oak casks, dates back to 1846. Ypioca Crystal – A clear cachaca, aged for 10 months in Brazilian wood barrels called freijo. Ypioca Ouro (Gold or Dark) – Aged for two to three years in balsamic barrels, spicy flavor. Ypioca Prata (Silver) – A clear cachaca suffused with aromas of tea leaves and evergreen. Ypioca Cachaca is typically 39% alcohol by volume (78-proof).”
